#1 Best Sweet& Spicy Maple Plank Salmon


Ingredients:

1 pound           Skinned salmon fillet
1                    Cedar plank
1/2 c.              Chopped shallots
2 Tbsp             Maple Syrup
1/4 C.              BBQ Sauce  –Mesquite or Smoky flavor
1/2 Tbsp.         Red pepper flakes
1 Tbsp             Brown sugar

#2 Candied Pecan & Mustard Planked Salmon Recipe

4 lb.              Skinned salmon fillet
1/4  cup         Candied pecans chopped finely in food processor
1 Tbs             Apple butter
1 Tbs             Dijon Mustard
Black pepper To Taste

Mix together all sauce ingredients in a plastic container with lid. Place salmon fillet inside, and turn to coat. Place cover on, and marinate 2-12 hours

Plank Preparation:
The plank will need to be soaking in water for 2–4 hours prior to grilling.


Fire up the grill to about 350F
Place the marinated salmon onto plank and pour half of the remaining marinade onto the salmon.


Put the plank directly on the heated grill rack

Close the lid and cook as slowly as possible (roughly 20–30 minutes)

Pour the remaining marinade over salmon halfway through the grilling process


Safety Note: Keep a water spray bottle on hand to spray down any flames while grilling.


Serves two people

Salad Side Dish

Grilled Pears On Mixed Greens
1 C           Water
1 C           Sugar
1 C           Pecans
1/3 C        Balsamic Vinegar
2 Tsp        Fresh Oregano, Minced
1 Tsp        Shallot, Minced
1 Tsp        Sugar
1 Tbs        Fresh Chives
1 Tbs        Red Onion, Minced
1 C           Canola Oil
4              Pears, Ripe, Peeled
3 Tbs        Olive Oil
5 C           Spring Mixed Salad Greens
1/4 C        Crumbled Blue Cheese
Salt & Pepper To Taste

Recipe Directions

Preheat over to 350 deg. For the pecans, boil together the water and sugar. Add the pecans and simmer 5 minutes. Drain and toast the pecans on a well-greased baking sheet until golden (about 10 mins). Set aside to cool. This can be done a few days ahead.


Mixed Green Dressing: Mix the vinegar, shallots, sugar, chives and onion. Slowly whisk in canola oil, and make sure the dressing is thoroughly combined. Season with salt and pepper. Set aside. This too can be made earlier.


For the pears: cut into quarters and remove the seeds. Toss with olive oil and season with salt and pepper. Either grill or pan fry until the pears are tender. Not mushy, but tender. In the pan would be approx 15 mins or so.


Toss the salad with the dressing and mound the pears in the center of each plate. Top with candied pecans and crumbled blue cheese. Enjoy!
