When a live lobster for delivery arrives at your door carefully unpack and make sure claws all have been banded before handling. Sometimes they may slip during transit. You do not want a loose claw to grab one of your fingers as it would snap it into like a twig. Only take the bands off claws when the lobster has died.
If you have fully cooked and frozen your lobster or lobster meats make sure you never defrost them. This will take away from the flavorings being held within the lobsters. Only heat until warm no hotter as it will make the meat tough instead of tender.
For fresh live lobsters it only takes 10 to 14 minutes to boil per pound. Water needs to be boiling for the best flavor and tender meat when dropping in the lobster to the pot. Lobsters should be covered with water completely, therefore you will need a deep extra large pot.
Lobsters heads hold much of the water they were boiled in so making a slight hole in them will drain out the cooking juices and seal the flavors in. The meat will be tender and mouthwatering when removed from the shells.
You can also recycle the water the lobsters were boiled in and freeze in jars or bags for soups or casseroles that you may want to make in the future.
An important thing to remember is too be sure the lobsters you are cooking is in good health. You can do this by looking at the tail it should curl under slightly when touched and should never be straight. Tails that are straight mean the lobster died too soon before cooking. Lobsters should always carry a fresh scent to them never anything overly fishy or foul smelling. If you are not sure then do not take a chance on becoming sick by bad lobster. To gain even more taste from them cook as soon as you can after delivery.
Softer shelled lobsters are more tender and take much less time to cook. The harder shelled ones still taste great but are a little tougher and they take a longer amount of time when boiling.
For the more health conscious of us lobsters also tastes wonderful when grilled. This is a lot less messy than the boiling too. Whole lobsters are placed onto a hot grill and then left on one side til it turns bright red then turned and left on opposite side until that is the same in color. Serve with delicious garlic butter and gumbo if you have it on hand.
Live lobsters for delivery can be split and cooked on the grill too. You will want to place Meat side on grill for about 3 minutes and turn once the shell is a bright shade of red and cook additionally 7 minutes while the shell side is on the grill.
