Simple Barbecue Turkey Recipe

 

Ingredients:

1                                                           9 to 11 pound turkey
1/4 cup Your choice                                  Vegetable Oil, Olive Oil or, Flavored Oil
1/2 Tsp                                                  Salt

 

Preparation:

  1. Rinse your turkey, and pat it dry with paper towels. 
  2. Sprinkle the inside cavity of the bird with salt
  3. Skewer the neck to the back, and tie the legs to the tail
  4. Twist the wing tips under the back to keep from burning
  5. Insert a meat thermometer into the center of one inside thigh muscle (don’t touch the bone)

 

Grill Preparation

  1. Prepare your grill, and start your fire using your chimney starter. Dump and position coals around a center drip pan. 
  2. Test the coals for medium heat above the drip pan. You will need to add additional coals and water about every 2o-30 minutes or as necessary.
  3. Pour one inch of water into the trip pan.

 

Positioning Your Turkey

  1. Place the unstuffed bird breast side up, over the center drip pan (not over the coals)
  2. Brush the turkey with the cooking oil, and close up the grill with a lid
  3. Brush the bird occasionally with more cooking oil.

 

Grill Time

Grill for 2 1/2 to 3 hours or until the meat thermometer reads 180 degrees to 185 degrees Fahrenheit

Grilled Fruited Stuffing Recipe

Serves 10

Ingredients

3 1/2  cups                    fat-free, less-sodium chicken broth
1  cup                           dried mixed-fruit bits
2  tablespoons               butter or margarine
2  cups  finely chopped   onion
1/2  cup  thinly sliced     celery
1  (14-ounce) package    cubed country-style stuffing mix

Preparation

Preheat oven 350°.

Combine the chicken broth and the dried fruit in a bowl; microwave at high for 2 minutes or until hot. Cover and let stand 10 minutes.

Melt the butter or margarine in a saucepan over medium heat.

Add onion and celery; cook approximately 8 minutes or until tender

Add chicken broth and fruit mixture, and bring to a simmer.

Remove from heat; stir in stuffing mix, tossing well.

Spoon stuffing into a large bowl; cover and refrigerate for 2 hours.

Cooking In Foil

 Tear off an 2 sections of 18 X24 pieces of heavy duty foil, and lay one on top of the other.

Place the stuffing mix in the center of the foil, bring up the edges to  create a foil packet, and seal by folding over twice. Leave enough space for steam to build. 

Place the foil packet beside the turkey during the last 25-30 minutes of cooking until heated through.
